Cook the rice first

Roast or sear the chicken

Heat the oil in a large skillet over medium-high heat. Cook the chicken in a single layer for 4 minutes without stirring, then toss and cook 3 more minutes until it reaches 175 degrees F.

Char the peppers in the same pan

Add the peppers and corn to the pan after the chicken comes out and cook 4 minutes over high heat until they brown in spots. The pan already has the spice and chicken fat in it.

Cool 20 minutes before assembling

Spread the rice and chicken on a sheet pan and let them cool for 20 minutes. Lidding hot food is the fastest way to ruin the texture by day two.
