Avocado Toast With Poached Egg and Chili Oil
Nine minutes total, and the only technique that matters is the poach: a bare simmer, a splash of vinegar, and a 3 minute timer. Everything else is assembly.

A poached egg fails for two reasons, and neither of them is the egg. Either the water is at a rolling boil, which tears the white into wisps, or the egg is old, which gives you a flat white that spreads. Fresh eggs hold a compact shape because the white is thicker.
Bare Simmer, Not Boiling Water
Bring the water to the point where small bubbles cling to the bottom of the pan and break occasionally at the surface. That is around 180 degrees F. A full boil is 212 degrees F and is aggressive enough to shred the egg white before it sets.
A tablespoon of white vinegar in the water helps the white coagulate faster, and it does not make the egg taste sour at this concentration. Salt does the opposite and breaks the white down, so keep it out of the poaching water and season after.
Crack Into a Cup First
Cracking straight into the pan risks shell and gives you less control over where the egg lands. Crack into a small cup, then slide the egg gently into the water near the surface. Three minutes gives you a firm white and a fully liquid yolk; three and a half starts to set the edge of the yolk.
Season the Avocado, Do Not Just Mash It
Plain mashed avocado on toast tastes flat no matter how ripe the fruit is. Mash it with salt, lemon juice, and a pinch of flaky pepper, and taste it before it goes on the bread. The lemon also slows the browning if you are not eating immediately.

Steps
Toast the bread first
Toast the slices until deeply golden and crisp at the edges. Sturdy toast is what keeps the whole thing from collapsing under a wet egg.

Bring water to a bare simmer
Fill a wide skillet with about 2 inches of water, add the vinegar, and heat until small bubbles form on the bottom. Do not let it reach a rolling boil.

Season the avocado properly
Mash the avocado with the lemon juice, half the salt, and some pepper. Taste it and adjust. Seasoned avocado is the difference between good and forgettable.
Slide the eggs in from a cup
Crack each egg into a small cup, then lower the cup to the water and slide the egg in. Cook undisturbed for 3 minutes for a runny yolk.
Lift out and drain
Remove the eggs with a slotted spoon and touch them to a paper towel for a second to drain the water. This keeps the toast from getting soggy.
Assemble and finish
Spread the avocado on the toast, top with the eggs, and finish with chili crisp, chives, flaky salt, and red pepper flakes. Serve immediately.
Small Fixes for Common Failures
- If the whites feather out every time, the eggs are too old or the water is too hot. Fix both before blaming the technique.
- Poach up to four eggs at once in a wide skillet, but add 30 seconds to the timer since the water temperature drops.
- No chili crisp? Use good olive oil plus a pinch of smoked paprika and red pepper flakes.
